Homemade Wheat Pasta
Easy homemade wheat pasta — with or without a pasta maker — ready in about 45 minutes.
By Jeremy Fyler · Sep 23, 2020
Ingredients
1 1/4 to 1 3/4 cups Fyler Farms sifted wheat flour
1/2 tsp sea salt
3 large eggs
- Combine flour and salt on a flat surface. Make a well, add the eggs, and whisk with a fork while gradually pulling in flour. Knead until smooth and no longer sticky, then rest the dough in a disk under a damp towel for 30 minutes.
- Divide into 8 pieces. Flatten each and roll thin with a pasta machine or rolling pin.
- Cut with a fettuccine attachment or a knife into 1/4-inch strips. Hang to dry if you like.
- Boil salted water, add the noodles, and cook until they float and turn tender, 4–5 minutes. Drain and toss with olive oil.
Tip: No pasta machine? A rolling pin and a sharp knife work just fine.
